Urundai Kolambu

This kolambu is very popular at my in laws place. My mother-in-law usually makes it during holidays as it takes a long time to prepare.

































Ingredients for kolambu:
========================
onions: 1 medium chopped fine
tomatoes: 2 medium chopped fine
vegetables: 1 cup brinjals chopped lenth wise
cumin: 1/4 tbsp
black pepper corn: 1/4 tbsp
garlic: 2 cloves
ginger: 1 tbsp chopped
red chilli powder: 1/3 tbsp
coriander powder; 1/2 tbsp
curry leaves: 1 handful
fenugreek seeds: 1 heavy pinch
coconut milk: 1/2 cup thick
oil as required

Seasoning
=========
mustard seeds: 1/4 tbsp
curry leaves as requried
oil: 2 tbsp
green chilli slit lengthwise

Ingredients for urundai:
=======================
chana dhal: 3/4 cup
onion: 1 medium chopped
green chillies: 3
ginger: 1 inch strip
turmeric: 1 pinch
salt

Step1: Make Kolambu:
===================
1) Keep a kadai and add 1 tbsp of oil.
2) Add cumin,pepper corn,chopped onions and fry them on medium flame
3) Add ginger & garlic. Fry it for 2 minutes
4) Add tomatoes & Cook until tomatoes become soft.
5) Grind this and keep it aside
6) Keep the pan back
7) Add 2 tbsp oil
8) Add fenugreek seeds and curry leaves.
9) After curry leaves starts spluterring add brinjals
10) Fry for 5 minutes
11) Add half a cup of water and let the vegetables cook for 10 minutes
12) Now add the ground mixture,coconut milk, chilli powder,coriander powder,turmeric, salt and enough water.
13) cook the gravy for 20 minutes on a medium to low flame until the raw aroma goes

Step2:Seasoning:
================
Heat 2 tbsp of oil in your seasoning pan and add all the seasoning stuff
After curry leaves and mustard splutters, switch off the gas

Step3: make urundai
====================
1) Soak chana dhal for 2 hours
2) grind it with chillies and ginger to a coarse paste
3) Add chopped onions, turmeric and salt
4) Mix everything and make small lemon size balls out of it
5) Add water in your idli cooker and heat it
6) Grease your idli pans with oil and place the urundais on the idli plates
7) Close the pan and steam it for 8 minutes
8) take them out and drop them in the kolambu

Simmer the kolambu and leave it for 5 minutes. Switch off the gas and add the seasoning. Serve with hot rice and appalam or boiled eggs
