2 generous Servings
Preparation and cooking time: 40 minutes
10 ounce/ 280 grams bag of spinach. Wash and chop them.
chopped onion: 1 cup
chopped tomatoes: 1.5 cups
green thai chillies: 2 chopped
minced garlic: 1/2 tbsp
minced ginger: 1/2 tbsp
oil: 1 tbsp
mustard seeds: 1/4 tbsp
cumin seeds: 1/4 tbsp
turmeric: 1 pinch
salt as required
--Keep the pan on the stove and add oil
--After oil heats up, add mustard seeds,cumin and turmeric
--Mustard seeds will start spluttering. Add garlic and ginger
--Fry it on low flame for a minute
--Add chopped onions and chillies. Keep the flame medium to low and fry the onions until they become transparent. Deep frying or browning is not required
--Add the chopped spinach leaves, tomatoes and salt. Mix everything and cook for 12-15 minutes on medium to low flame.
Serve this as a side dish for rice or rotis.
