Spicy mutton pepper fry

Ingredients
===========
Mutton chops: 2 pound
Onions: 2 medium, thinly sliced
Green chillies: 4 slit vertically
Ginger garlic paste: 2 tbsp
Bay leaves: 3 small pieces
curry leaves: 1 handful
cilantro: 1/2 cup
Mint leaves: remove leaves from 2 stalks
cashews: 1/4 cup (optional)
OIL: 3 tbsp

masalas:
------
Garam masala: 1/4 tbsp
Coriander powder: 1/2 tbsp
chilli powder: 1/4 tbsp
black pepper powder: 1 tbsp
cumin powder: 1/4 tbsp






Procedure
---------
1) keep the pan on the stove, medium flame.Add 2 TBSP oil.
2) After the oil gets heated, add curry leaves, mint leaves and half of chopped cilantro leaves.
Add garam masala, cumin powder, coriander powder, ginger garlic paste
3) Simmer the flame and fry the masalas for 5 minutes
4)Now add the washed mutton pieces,chiili powder, peeper powder and mix everything
5) Increase the flame to medium and let everything cook for 5 minutes
6)Move this stuff to a pressure cooker and add 3/4th cup of water. Pressure cook until the mutton becomes soft. My cooker takes 7 whistles on medium to low flame.
7) Keep the pan again and add 1 tbsp of oil.
8) After the oil gets heated, add the bay leaves
Add chillies and fry for 2 minutes
9) Add the onions and cook it until it becomes light brown.
10)Add the cooked mutton to this pan and mix everything.
Add the remaining cilantro leaves and simmer it. Cook until the mutton becomes almost dry.

You can fry the cashews and add it over mutton after it is done.Serve this dish with hot rice, goes well with sambar and rasam.
